Grandma Chuy’s Crispy Ceviche Unites Cuisines of Peru, Argentina, and Mexico

Unidos Latin Kitchen + Bar is set to celebrate "Dia del Ceviche" or National Ceviche Day on Friday, June 28th, in a flavorful tribute to founder Sal Muñoz's grandmother. On this special day, every dinner entrée will be accompanied by a complimentary sample of crispy ceviche appetizer.


Ceviche, a dish renowned for its refreshing flavors and health benefits, finds its roots in Latin American coastal regions. It involves marinating fresh seafood in citrus juices, a process known as denaturation, which "cooks" the fish without heat, rendering it tender and flavorful in a matter of minutes.


Sal Muñoz, co-founder of Unidos Latin Kitchen + Bar, drew inspiration for their signature crispy ceviche from his grandmother Chuy's beloved fried rice. This innovative dish seamlessly blends the culinary traditions of Peru, Argentina, and Mexico, incorporating Japanese sushi techniques and a touch of soy sauce-infused chimichurri. Each bite-sized square of crispy rice is adorned with layers of guacamole, chalaquita (a Peruvian condiment), and thinly sliced corvina fish dressed in a tantalizing chimichurri soy sauce, finished with aji Amarillo aioli and delicate micro cilantro.


"Crispy ceviche pays homage to my grandmother's culinary prowess while celebrating the diverse flavors of Latin American cuisine," remarks Muñoz.


Beyond its delectable taste, ceviche boasts numerous health benefits. Laden with protein and low in fat, it's a favorite among health-conscious diners. The citrus marinade not only enhances flavor but also provides a hefty dose of vitamin C. Additionally, ingredients like garlic, peppers, and onions possess natural antibacterial properties, promoting respiratory health and alleviating common cold symptoms.


A highlight of Unidos' ceviche offerings is the leche de tigre, or "tiger's milk," a zesty concoction leftover from the ceviche marination process. Peruvians often sip on this invigorating elixir to soothe hangovers or as a refreshing palate cleanser.

Executive Chef Melina Martinez collaborates closely with local fishmongers to source the freshest catch of the day for Unidos' ceviche creations. The menu boasts an array of options, from traditional corvina ceviche to innovative interpretations like Aguachile Shrimp & Pineapple Tostada and Crab Taquitos.


To complement the vibrant flavors of ceviche, Muñoz recommends pairing it with a crisp sauvignon blanc or the classic Peruvian cocktail, Pisco Sour. These beverages accentuate the dish's citrus notes, enhancing the overall dining experience.
