A Culinary Journey from France to Naples
A native of Cannes, France, Chef Ben’s culinary path has been nothing short of extraordinary. Before arriving in Naples in 2022, he honed his craft at some of France’s most prestigious Michelin-starred establishments, including L’Eden Rock in Antibes (one Michelin star), Marc Veyrat’s Le Ferme de Mon Pere in Megeve (three Michelin stars), and Bruno Oger’s La Villa des Lys Majestic in Cannes (two Michelin stars). His expertise spans regional French cuisine, from rustic home cooking to the most refined gastronomic creations.
His journey to The French began with a simple Instagram message to Chef Vincenzo, a fateful interaction that sparked a shared vision of bringing authentic French culture and cuisine to Naples. Enamored with the city from a prior visit, Chef Ben eagerly embraced the opportunity to become part of The French’s dynamic team.
A Culinary Vision for The French
Over the past three years, Chef Ben has worked alongside Chef Vincenzo, developing his operational expertise in a fast-paced American kitchen while infusing the menu with traditional French flavors. Now, as executive chef, he takes the helm of a talented culinary team, including sous chef Mayko Torres and pastry chef Maria Selas. Together, they will continue crafting a menu that celebrates French culinary traditions while incorporating the finest local ingredients.
Signature dishes crafted by Chef Ben reflect his deep understanding of regional French cuisine:
Cassoulet de Toulouse – A hearty dish featuring Toulouse pork sausage, duck confit, and pork belly confit, served in a terracotta bowl with a golden-crusted panko topping. Prepared over two days, this iconic dish is available with a two-day advance order.
Duck Leg Confit – Slow-cooked to perfection and served atop Potato Sardalaises, a flavorful dish of potatoes, bacon, herbs, and garlic, finished with a cherry gastrique.
Bouillabaisse Grand Mer – A Provençal saffron fish stew, made from the bones of the day’s fresh catch, featuring red snapper, grouper, mussels, shrimp, and scallops.
Salade Seguin – A delightful Alpine-inspired salad with goat cheese, walnuts, crusted brie croutons, and herbes de Provence.
